Recipes using Cocoa Powder and Coffee



As many coffee drinkers already know, coffee and cocoa powder makes a great combination. It's a match made in heaven. Here at GCS, we have received a number of recipes using cocoa powder and coffee from our gourmet coffee club members. The following recipes we consider to be the two best.

Mocha Banana Bread

2 cups of Flour
2 tbsp of Cocoa Powder
3/4 tsp of Baking Soda
1/2 tsp of Salt
3/4 cup of Sugar
1/4 cup Butter, softened
2 large Eggs
3 Bananas, mashed
1 tsp of Vanilla
3 tbsp of Coffee

Preheat your oven to 350 degrees and lightly grease an 8 1/2 x 4 1/2-inch loaf pan.

Start by combining the flour, cocoa powder, baking soda, and salt in a medium size mixing bowl. Stir until mixed.

Place the sugar and butter in a separate bowl. Combine using a hand mixer on medium speed until the mixture is creamy. Now, beat in the eggs. Add banana, vanilla, and coffee into the mixture and mix on low speed until well blended.

Finally, slowly add flour mixture and mix until the batter is moist. Once it's done, spoon the batter into the pan.

Bake for 1 hour. You can use a toothpick to check for doneness before removing it from the oven. Allow the pan to cool for about 10 minutes then remove the bread. Allow the bread to cool completely before slicing and serving.

Mocha-Almond Biscotti

1/2 cup of Almond Shavings, toasted
1 tsp of Shortening
2 large Eggs
2 large Egg Whites
2 cups of Flour, divided
1 cup of Sugar
1 tsp of Baking Powder
1/2 tsp of Baking Soda
1/4 tsp of Salt
1 tsp of Vanilla Extract
1 tbsp of Cocoa Powder
2 tsp of Instant Coffee Powder
4 tsp of Water
1 oz of Chocolate, melted
1/2 tsp of Almond Extract

Preheat your oven to 325 degrees and lightly grease a baking sheet.

Now you can combine 2 cups of flour, the sugar, baking powder, baking soda and salt in a large mixing bowl. Stir until well combined. In a separate bowl whisk together the eggs, along with the egg whites and vanilla. Combine the two mixtures and mix until smooth. The dough should be very sticky.

Divide the dough in two equal halves. Combine the instant coffee, chocolate, cocoa powder and water in a small bowl and mix that with one half of the dough. Mix just until combined. Stir in the almond extract and toasted almond shavings into the other half of the dough.

Lightly flour a counter top and place half of the almond dough on it. Knead the dough, using flour as needed. Once it's no longer sticky, pat the dough out into a rectangle. Carefully top it with roughly half of the chocolate dough and then roll it into a cylinder. Roll the cylinder back and forth to form a log that is roughly a little bit longer than a foot and about 1 1/2 inches thick. Repeat this process with the remaining dough.

Bake for about 25 minutes until they are firm to the touch. After you take them out, reduce the oven temperature to 300 degrees. Allow the logs to cool on a rack.

After the logs have cooled completely, use a knife to cut them diagonally into half inch thick slices. Allow the slices to stand upright with a little bit of space in between. Return them to the oven and bake for 40 more minutes. Remove them from the oven and allow them to cool on a wire rack.
