Pumpkin Bread Recipe Cooked in a Coffee Can



Whenever Halloween comes around we always start thinking about some of the wonderful foods you can make from pumpkin. Pumpkin pie being tops on the list for most people followed closely by pumpkin bread. Of course there are many different ways to make pumpkin bread and one of the more interesting ways to bake it in a coffee can. It adds an amazing aroma and a hint of coffee flavor as well.

This pumpkin bread recipe cooked in a coffee can is made using pumpkin purée, which can either be made from scratch or bought in a can at most grocery stores. You can make it yourself at home by steaming or roasting pieces of pumpkin and then scooping out the flesh. Remove the skin and mash them up with a fork or blend them in a food processor.

One advantage pumpkin purée from a can has over homemade pumpkin purée is they the pumpkin flavor is almost always stronger, particularly if you use leftover pieces from Halloween Jack-O-Lantern pumpkin. We would recommend using sugar a pumpkin or a butternut squash instead however it depends on how strong of a pumpkin flavor you really want.

1 cup of Pumpkin Purée
1 1/2 cups of Flour
1 tsp of Baking Soda
1/2 tsp of Nutmeg
1/2 tsp of Cinnamon
1/2 tsp of Allspice
1/2 tsp of Salt
1 cup of Sugar
1/2 cup of Olive Oil
2 Eggs, beaten
1/4 cup of Water
1/2 cup of Walnuts, chopped (optional)
2 Coffee Cans (one pound each, no lip)

Start by preheating the oven to 350 degrees. Remove any paper or glue that may be attached to the outside of the coffee cans and thoroughly grease the insides with butter.

Thoroughly combine the flour, salt, sugar, and baking soda in a mixing bowl. In a separate bowl, you should mix together the pumpkin purée, eggs, olive oil, water, and the rest of spices. Stir until well mixed.

Now you can combine the two mixtures together but do not mix too them thoroughly. Stir in the walnuts if you decided to include them.

Pour the batter into each of the coffee cans. Do not fill more than half way full, the bread will need room to expand. Pop the cans in the oven and bake for about 50 to 60 minutes. You can test the doneness with a toothpick. Once done, remove the bread from the coffee cans and let them cool on a rack.
