Orange Marmalade Coffee Cake Recipe |
1/2 cup of Orange Marmalade 1/4 cup of Sliced Almonds 3 tbsp of Butter, melted 2 tbsp of Corn Syrup, light 2 1/4 cups of Flour 1/4 cup of Sugar 1 tbsp of Orange Peel, grated 3 tsp of Baking Powder 1/2 tsp of Salt 1 cup of Half-and-Half Making the Cake: Preheat your oven to 375 degrees. And lightly grease an 8x8 pan, preferably square. Start by placing the orange marmalade, almonds, butter and corn syrup into a bowl and stir until mixed. It doesn't need to be well mixed. Pour this mixture into the bottom of the pan. Next you should place the flour, sugar, baking powder, salt and orange peel in medium size bowl. Use a hand mixer on the lowest setting and begin to carefully cut in the half-and-half. Use only enough so that the dough leaves the side of the bowl and forms a ball in the middle. Finally, use a spoon to drop the batter over the marmalade mixture already in the pan. Try to make it as even as possible and flatten it slightly when you are done. Bake for about 30 until it is golden brown. Be sure to use a toothpick to check the doneness. Once it's done, take it and place a heatproof serving plate on top of the pan. Immediately turn the whole thing over (so that the plate is facing up). This will allow the marmalade mixture drizzle down over coffee cake.
