While the second recipe might not technically be coffee cake, you will not be disappointed that you tried these "coffee muffins." Maple Banana Coffee Cake For the Cake: 1 cup of Flour 3/4 cup of Sugar 2 tsp of Baking Powder 6 tbsp of Butter, softened 6 tbsp of Milk 1 Egg 1/2 tsp of Cinnamon 1/4 tsp of Salt 1/2 tsp of Vanilla Extract For the Topping: 1 cup of Brown Sugar 1/4 cup of Butter 3 tbsp of Maple Syrup 1/4 cup of Toasted Walnuts, chopped 4 Bananas Begin by preheat your oven to 325 degrees and lightly greasing a 9 inch round cake pan. For the Topping: Place the sugar and butter in a medium sized saucepan and heat on low. Keep stirring until the butter melts and the mixture is well blended. After it's well mixed, pour it into cake pan and spread it out evenly. Now pour maple syrup over sugar mixture and sprinkle the nuts out evenly. Peel all 4 bananas and cut them diagonally into 1/4-inch-thick slices. Place the banana slices in the pan, overlapping them slightly to cover the bottom of the pan. Set the pan aside for now. For the Cake: Combine the flour, cinnamon, salt and baking powder in a mixing bowl to stir until blended. In a separate bowl, beat the sugar and butter in until the mixture becomes creamy. Beat in the egg and vanilla extract. Continue beating until the mixture is light and fluffy. Now, you should carefully beat 1/3 of the wet mixture into the flour mixture. Next, beat in 2 tablespoons of milk. Repeat this process until the two mixtures are completely combined. Spoon the batter carefully over the bananas. Bake for about 55 minutes. You can check for doneness with a toothpick before taking it out of the oven. Transfer the cake to a wire rack. You can run a knife around pan sides to help prevent it from sticking. Allow the cake to cool for about half and hour. Hold a plate over the pan and flip it over. Let it stand for a couple of minutes, then gently lift off pan. Serve warm or cold with whipped cream. Banana Maple "Coffee Muffins" 2 cups of Flour 1 tsp of Baking Powder 1 tsp of Baking Soda 1 tsp of Cinnamon 1/2 cup of Sugar 1 1/4 cup of Buttermilk 1 Egg 3 tbsp of Maple Syrup 3 tbsp of Vegetable Oil 3 Bananas, mashed Preheat your oven to 400 degrees. Prepare a standard muffin pan (15 medium-sized muffins) with muffin papers. Combine all the flour, baking powder, baking soda, sugar and cinnamon in a large mixing bowl and stir until well combined. In a separate bowl, mix the butter, egg, maple syrup and oil. Stir the bananas into the mixture and keep stirring until completely mixed. Slowly add the wet mixture to the dry mixture, stirring as you go. Once the two mixtures are combined, divide the batter evenly into the 15 medium sized muffin papers. Bake for about 20 minutes, until they are a light golden brown. Remove from the oven place on a rack to cool before removing them from the pan.
