A slice of Jiffy Mix coffee cake goes well with a cup of hot coffee. The cake is surprisingly easy to make, and even a beginner can make it in less than an hour. I'm sure you'll agree, the results are spectacular, and you're sure to come back for more. Below is a quick and easy Jiffy Mix coffee cake recipe. Jiffy Mix Coffee Cake . 2 cups of Jiffy Mix . ¼ cup of sugar . 1 teaspoon of cinnamon . ½ teaspoon of nutmeg . 1 cup of raisins (Optional. You could also use nuts if you wish) . 1 egg . 2/3 of a cup of apple juice . 2/3 of a cup of baking mix (like Bisquick) . 2/3 of a cup of brown sugar . 1 teaspoon of cinnamon . ½ a stick of margarine Preheat the oven to 400 degrees Fahrenheit. In a large bowl, mix the sugar, cinnamon, nutmeg and raisins together. Now add the egg and juice into the mixture, and mix well. The batter should be smooth. Grease a nine-inch cake pan, and pour the batter inside. Now you will be ready to make the topping. Mix the baking mix, cinnamon and brown sugar together. Add in the margarine until the topping is crumbly. Sprinkle the topping onto the batter, and stick in the oven. Let it bake for thirty minutes. Remove from heat, and wait until it's cool before removing from the pan. You should be left with a great tasting coffee cake that will compliment your cup of coffee well. | |
