How to Make Chocolate Coffee Beans

Now that you have the ingredients, it's time to melt the chocolate. Next, put a pan of hot water on the stove and heat it on low. Now, place the bowl over the pan, making sure the bowl does not touch the water. Whisk gently and continue until the chocolate is thoroughly melted. You can always remove it from the heat entirely if the chocolate gets too hot and don't worry because you can actually reheat chocolate quite a few times without ruining it.

Once the chocolate is melted put about one third of a cup of coffee beans in the melted chocolate and stir until they are well coated. To get the coffee beans back out of the chocolate use a fork. Remove your coated coffee beans from the chocolate and place them on a baking sheet lined with wax paper. For best results, do not allow the gourmet chocolate covered coffee beans to touch each other. Repeat the previous steps until all of the coffee beans are coated. After you are done you can place the chocolate covered coffee beans in the refrigerator over night to harden. Once hardened, you should store them in an airtight container to ensure freshness.

I've found that method for melting chocolate you suggest is actually quite difficult. I would highly recommend a double boiler or chocolate melter instead. Or you can just use the microwave. Microwave the chocolate for one minute on medium heat, stir and then continue to microwave in thirty second intervals until the chocolate is thoroughly melted.
