Healthy Apple Coffee Cake Recipe Apple coffee cake is an excellent choice if you are looking for a healthy cake coffee recipe and it is also very easy to make. 4 cups of cored and coarsely-chopped tart cooking apples (4 to 5 apples) 1/3 cup of light brown sugar 1 ½ tablespoons of ground cinnamon 3 cups of flour 1 ¾ cups of granulated sugar 1 tablespoon of baking powder ½ teaspoon of salt grated zest of 1 orange 4 large eggs 1 cup of vegetable oil ½ cup of orange juice Preheat the oven to 375 degrees F and grease a 10 inch bundt pan. In a small bowl mix the apples with the brown sugar and cinnamon and set aside. In another bowl mix together the flour, sugar, baking powder, salt and orange zest. Using and electric mixer or whisk beat the eggs and oil until thick and creamy. This should take approximately 2 minutes at high speed. Add the egg mixture to the flour mixture along with the orange juice and blend again until moistened. Be careful not to over mix. You should ensure that there are no lumps or dry spots. Pour one third of the cake mixture into the bottom of a prepared pan and cover with half of the apple mixture. Pour another third of the cake mix over the apples and use a spatula to smooth, ensuring that the apples are covered completely. Repeat with the remaining apple mixture and cake mixture. Place into the oven for 60 minutes and then cover it loosely with some aluminium foil and bake for another 15 minutes. Remove and cool for about 1 hour.
