Fruit Coffee Cake Recipes



Apple Coffee Cake with Ice Cream Recipe

2/3 cup of Butter, room temp
1/3 cup of Sugar
1/2 cup of Sour cream
1 tsp of Vanilla
1 Egg
1 1/3 cup of Flour
2/3 tsp of Baking soda
1/8 tsp of Salt
1 Chopped Fresh Apple
1/3 cup of Raisins

Topping
1/4 cup of Flour
1/4 cup of Brown sugar
2 tbsp of Butter
1/2 tsp of Cinnamon

Preparing the Cake:
Preheat oven to 350 degrees. Grease a round 8-inch cake pan.

Place the butter and 1/3 cup of sugar into a bowl and mix until light and fluffy. Next you should, beat in one egg, the vanilla and sour cream.

In a separate bowl, combine the flour, salt and baking soda. Add the mixtures together and blend well into a smooth batter.

Now you can combine all of the ingredients for the topping. Mix only until it forms coarse crumbs.

Pour half of the batter into the greased cake pan and then use the apples and raisins to make an even layer. Next you should use about half of the topping crumbs to make another layer on top of the apples and raisins. Pour the remainder of batter on top and then sprinkle the rest of the topping on top.

Bake at 350 degrees for 25-35 minutes. You can check for doneness with a toothpick.

Serve warm, plain or a la mode. (Hint: Like most fruit coffee cake recipes, its best served with ice cream.)

Any Fruit Coffee Cake Recipes

1 1/2 cups of Peeled and Chopped Fruit
(could be apples, peaches, pineapple, blueberries or just about anything else)
3/4 cup of Sugar
2 tbsp of Cornstarch
1 1/2 cups of Flour
1/2 tsp of Baking Powder
1/4 tsp of Baking Soda
4 tbsp of Olive Oil
1/4 Cup Water
1 Egg, beaten
1/2 cup of Buttermilk
1/2 tsp of Vanilla

Toppings
1/4 cup of Sugar
1/4 cup of Flour
2 tbsp of Olive Oil

Preparing the Cake:
Preheat oven to 350 degrees. Lightly grease an 8 x 8 inch cake pan.

Combine your choice of fruit and 1/4 cup water in a pan and bring to boil. Reduce heat and simmer until tender. (Note that some fruits do not need to simmer very long or at all to become tender.)

Next you should combine the cornstarch and 1/4 cup of the sugar in a bowl. Slowly stir this mixture into the fruit. Allow it to cook until it is thick and bubbly stirring often. Let it cook for a couple of minutes more and then set it aside.

Combine 1/2 cup of the sugar, 1 1/2 cups flour, the baking powder and baking soda in a bowl and mix well. Add 4 tbsp of olive oil until it is well mixed. Combine the egg, vanilla and buttermilk in a separate bowl and then it add it to the flour mixture. Stir just until it is well moistened.

Spread half of the batter in the cake pan. Carefully spread the fruit mixture over batter. Place the remaining batter in small mounds on top of the fruit filling.

Combine the 1/4 cup sugar and 1/4 cup flour in a bowl and then add 2 tbsp of olive oil to the mix. Sprinkle over batter.

Bake at 350 degrees in the oven for 40 to 45 minutes until it is golden brown.

Serve warm, plain or a la mode. (Hint: Like most fruit coffee cake recipes, its best served with ice cream.)
