Cranberry Coffee Cake Recipe |
Cranberries are one of those gifts from nature that seems to have more uses than you could name in a lifetime. It only seems fitting that we post one of the cranberry coffee cake recipes we have received. For the Cake: 2 cups of Flour 1 tsp of Baking Powder 1 tsp of Baking Soda 1/2 tsp of Salt 1 cup of Sugar 2 large Eggs 1/2 cup of Butter, softened 8 oz of Sour Cream 3/4 tsp of Almond Extract 16 oz of Cranberry Sauce For the Glaze: 3/4 cup of Confectioners' Sugar 1 tbsp of Warm Water 1/2 tsp of Almond Extract Preheat oven to 350 degrees and lightly grease a 10 inch baking pan. Start by putting the butter in a large mixing bowl and whipping it until it is creamy. Using a hand mixer on medium speed, gradually add 1 cup sugar. Now, add the eggs and beat until thoroughly mixed. Add the sour cream and stir just until mixed. In a separate bowl, combine the flour, baking powder, soda, and salt and stir until well mixed. Slowly combine the dry mixture to the wet mixture. Use the lowest speed on your hand mixer. Finally, stir in the almond extract. Spoon half of the batter into the pan. Now, spoon half of the cranberry sauce over the batter in the pan and spread out evenly. Use a knife to cut a little bit of the cranberry sauce into the batter. Repeat the process with the rest of the batter and cranberry sauce. Put the pan in the oven and bake for about 50 minutes. Be sure check the doneness with a toothpick before removing from the oven.
