Coffee Ice Cream Cake Recipe |
In our other article, we have given you some great Coffee Cake Recipes. In this article, we will play with the coffee cake idea a bit, and try to make it even better. That's not to say that that it will be difficult to make but it does take more time to prepare a coffee & ice cream cake recipe. Coffee and Ice Cream Fudge Cake . ½ a cup of light corn syrup . 1 cup of heavy cream . 10 ounces of chopped, semi sweet chocolate . 16 graham cracker that have been broken into ½ inch pieces . 1 cup of toasted almonds . 3 tablespoons of white sugar . ½ a cup of melted butter . 1 ½ quarts of softened, coffee ice cream . 1 jar (about 7 ounces) of marshmallow crème . 2 cups of miniature marshmallows It's easiest to make the fudge sauce first. To make the sauce, just combine the heavy cream and the corn syrup in a heavy saucepan. Bring it to a boil and then remove it from the heat. Add the chocolate and then whisk until the mixture is smooth. Stick the fudge sauce into the fridge, until it's cool. It will probably take about 45 minutes. Now you can preheat the oven to 350 degrees Fahrenheit. Put the almonds and graham crackers in a blender and grind them finely. Stir in the sugar, and then add the butter and stir until moist crumbs form. Now coat the pan (9 inch pan) with the mixture. Stick the pan in the oven and bake for about 12 minutes, or until the mixture is golden brown. Remove from heat and let cool. Once it is cool, you can spread 2 cups of the ice cream evenly on the bottom of the pan. Spread ¾ of a cup of the fudge sauce evenly over the ice cream. Now take the entire thing and freeze it until it is set, then repeat the layering of the cake with the remaining fudge and ice cream. Freeze overnight. The next day, preheat the oven broiler. Place the cake pan on a cookie sheet, spread the marshmallow crème over the top of the cake and sprinkle the miniature marshmallows over that. Place in the oven and cook until the marshmallows are a golden brown. Remove from pan, and serve immediately. If you have any remaining fudge sauce, or want to make some more, you can drizzle the finished cake with it. | |
