Regular Roast - Coffee beans roasted to medium brown. It is often referred to as American Roast. Richness - A term used to describe many different characteristics of coffee, such as aroma or flavor. Richness typically means "strong, but not overpowering". Robusta - The only real alternative to Arabica coffee beans. Robusta coffee beans are usually have more body than Arabica coffee beans but are also far less flavorful. Robusta coffee beans are often used in commercial coffees and are rarely ever used in gourmet coffees, with the possible exception of espresso blends. Santos Bourbon - Market name for high-quality coffee beans grown in Brazil and shipped through the port of Santos. SCAA - Abbreviation for the Specialty Coffee Association of America. Shade Grown - Refers to any coffee which has been grown under a shade canopy. Some shade grown coffees also include the phrase "bird friendly" which means they have been grown under natural shade which also provides habitat for birds in the region. Bird friendly coffees are easier on the environment and are often some of the best tasting coffees available. Silverskin - A thin layer of skin which tends to cling to the innermost part of coffee bean. Single-Estate Coffee - Coffees which comes from a single farm, usually with a history for making great coffee. Many gourmet coffees are sold by estate name. This is especially true of Hawaiian Kona coffees. Single-Origin Coffee - A term which refers to coffee made from a single country, region and crop. Soft Coffee Beans - Usually refers to coffee beans grown at low altitudes. In general, these beans are not as flavorful as hard coffee beans but there are quite a few exceptions. Spanish Roast - A term used for coffee roasted darker than medium brown. French Roast may range in color from dark brown to almost black. Specialty Coffee - Refers to coffee sold by country of origin, roast, flavoring, or special blend, rather than by brand or trademark. Specialty Coffee Association of America - An important and influential group which is made up of specialty coffee roasters, coffee wholesalers, coffee retailers, coffee importers and growers. Steam Wand - A small pipe seen on most espresso machines that provides steam for frothing milk. Straight Coffee - Unblended coffee from a single country, region, and crop. Strictly Hard Bean - A grade of coffee bean which are grown at altitudes above 3,900 feet. This grading system is used in Central America and SHB is the highest possible grade of coffee bean in that system. Strictly High-Grown - The highest possible grade of coffee from El Salvador. Sumatra - The island of Sumatra lies in Indonesia and is world famous for its Mandheling coffee. Sun Drying - The traditional method of drying coffee beans. The beans are laid out on patios in the sunlight to dry. Sun Grown - Coffees grown in large amounts of direct sunlight. See also Shade Grown. Supremo - The highest possible grade of Colombian coffee. Swiss Water Process - A method of decaffeination that uses hot water and charcoal to remove the caffeine. | |
