Natural Coffee - A synonym for dry processed coffee.

Neapolitan Roast - A synonym for coffee beans roasted very dark, but not quite black.

New Crop - Coffee beans roasted quickly after harvesting and processing. These coffees tend to be more acidic than Old Crop.

New England Roast - A synonym for lightly roasted coffee beans. This roasting style is rarely ever used with on gourmet coffee beans.

New Guinea - The best coffees from New Guinea are grown on large estates which are known for their modern facilities.

Nicaragua - Nicaragua is known for good (not great) gourmet coffees.

Old Crop - Refers to coffee which has been kept in storage for several years leaving it with reduced acidity and increased body. Traditionally, aged coffee is held longer than "old crop coffees" and "mature coffees". However, some coffee exporters have been experimenting with accelerated aging by deliberately exposing the coffee to humid air.

Old Java - Java coffee beans which have been prepared using the Old Crop method.

Open-Pot Brewing - A method of brewing coffee in which the coffee grounds are heated but not boiled. The coffee grounds are then strained out before serving.

Organic Coffee - Coffee which has been grown without the use of chemical pesticides or herbicides. Before a coffee can be classified as organic it must be certified by a third-party.

Parchment - Parchment refers to the thin skin covering wet-processed coffee beans after the coffee beans have been processed and dried.

Patio Drying - A method of sun drying coffee beans.

Peaberry - A round coffee bean created when only one seed develops in the center of a coffee fruit. Peaberry coffee beans are often separated from regular coffee beans and sold separately.

Percolator - A coffeepot in which boiling water rising through a tube is repeatedly deflected downward through a perforated basket containing ground coffee beans.

Peru - The best Peru coffees are flavorful and mild. Look for coffees from the Machu Picchu region for the best gourmet coffees Peru has to offer.

Piston Machine - An espresso machine that uses a piston to force hot water through tightly compacted coffee grounds.

Plunger Pot - See French Press.

Polishing - A procedure at used to improve their appearance of coffee beans. Unfortunately, this procedure can harm the coffee beans and is usually frowned upon by gourmet coffee aficionados.

Portafilter - At its most basic level, a portafilter is a filter basket attached to a handle and used to hold coffee grounds. The device locks into place and forms a seal so that water can be forced through the coffee grounds at high pressures.

Puerto Rico - Puerto Rico is known for occasionally making coffees which are remarkably similar to Jamaican Blue Mountain Coffee. However, they also tend to be horribly inconsistent.

Pulping - Used in wet-processing, pulping is the process by which the fruit is removed from the coffee.

Pump Machine - An espresso machine that uses a pump to force hot water through tightly compacted coffee grounds.
