Coffee Dictionary (K-L-M)



Kalossi - Kalossi, which comes from Indonesia, is a coffee with a rich, unique flavor which, combined with its fragrant aroma, comes across as being almost exotic.

Kenya - The rich volcanic soil around Mount Kenya produce some of the finest coffee beans in the world. There are rumored to be more than 250,000 small coffee farms in Kenya. Each coffee farm produces relatively small batches of coffee which are then sold at a weekly government run coffee auction. This approach rewards higher quality growers with higher prices, with Kenya AA coffee beans commanding the best prices.

Kona Coffee - Hawaii's Kona coffees are some of the best and most expensive in the world. They are known for being well balanced and complex in aroma.

Latte - A single shot or double shot of espresso coffee combined with about three times as much steamed milk and often topped with a decorative design called a rosetta.

Light Espresso Roast - A synonym for coffee beans roasted to medium dark, somewhere between medium brown and dark roast. This roasting style results in a smoother cup of coffee but also sacrifices some of flavor.

Light Roast - A synonym for lightly roasted coffee beans. This roasting style is rarely ever used with on gourmet coffee beans.

Lintong - Market name for one of the best coffees from Indonesia.

MAM - An acronym for Medellín, Armenia, and Manizales, the three of the most famous from coffees from Colombia.

Mandheling - The best and most famous coffee from Indonesia.

Mature Coffee - Refers to coffee which has been kept in storage for several years leaving it with reduced acidity and increased body. Traditionally, aged coffee is held longer than "old crop coffees" and "mature coffees". However, some coffee exporters have been experimenting with accelerated aging by deliberately exposing the coffee to humid air.

Medium Hard Bean (MHB) - A grade of coffee bean which are grown between the altitudes of 1,600 to 3,300 feet. This grading system is used in Central America and MHB is the third highest grade of coffee bean in that system.

Medium Roast - Coffee roasted to medium brown. It is usually considered the "normal" roast.

Mexico - Tapachula and Chiapas are considered the best Mexican coffee and are light enough to be drunk black. ) You might also consider Altura Superior. In our experience, it is the one of the most consistent coffees available anywhere.

Microwave Brewers - A type of brewer design to be used in a microwave. These are not usually used to brew gourmet coffees.

Middle Eastern Coffee - A style of coffee drinking where the coffee is ground into a fine powder and sweetened. It is served with the grounds still in the coffee.

Mild - A term used to describe high-quality coffees (as opposed to hard).

Milling - The process by which the skin (and sometimes the fruit) of coffee beans are removed.

Mocca (Mocha) - Usually refers to a type of coffee from Yemen or Ethiopia. Mocca can also refer to an espresso coffee with chocolate added to it.

Mocca-Java (Mocha-Java) - Believed to be the oldest coffee blend in the world, Mocca-Java is a blend of Mocca coffee beans and Java coffee beans. It should be noted that this name has been greatly abused by coffee manufacturers the world over. You should take special care when selecting a Mocha-Java coffee to ensure that it is made with high quality coffee beans.

Monsooned Coffee - Coffee from southern India which has been exposed to monsoon winds in order to give the coffee increased body and reduced acidity.
