Coffee Dictionary (F-G)



Fair Traded Coffee - Coffee which has been purchased directly from farmers at market value. The farmers receive slightly more money this way.

Fermentation - In coffee terms, fermentation usually refers to the natural process which occurs as the fruit surrounding the coffee rots away leaving exposed the coffee beans inside. Fermentation can also refer to a taste defect, like a moldy or musty flavor.

Filter - A thin and porous piece of paper, usually round or cone shaped, used to hold the coffee grounds in place while hot water is poured over them.

Finish - A term used to describe the taste of a coffee just before it is swallowed.

Flavored Coffees - Any coffee which has had an artificial flavor added to it. Some people love these coffees, others hate them.

Flavor Defects - A term used to describe any unpleasant flavors in a coffee. Flavor defects are caused by problems during processing.

Fragrance - In coffee terms, fragrance usually refers to the smell of coffee beans after they have been ground.

French Press - A method of brewing coffee, usually one cup at a time, by mixing coffee grounds with hot water and then using a plunger with a filter attached to it to force and trap the coffee grounds at the bottom of the cup. Many people consider the French Press to be the best way to brew coffee.

French Roast - A term used for coffee roasted darker than medium brown. French Roast may range in color from dark brown to almost black.

Frothed Milk - Milk that has been steam heated until it develops a layer of bubbles. Frothed milk is an important element in many espresso drinks.

Full-City Roast - A synonym for coffee beans roasted to medium dark, somewhere between medium brown and dark roast. This roasting style results in a smoother cup of coffee but also sacrifices some of flavor.

Good Hard Bean (GHB) - A grade of coffee bean which are grown between the altitudes of 3,300 to 3,900 feet. This grading system is used in Central America and GHB is the second highest grade of coffee bean in that system.

Gourmet Coffee - Refers to coffee sold by country of origin, roast, flavoring, or special blend, rather than by brand or trademark.

Green Coffee Beans - Unroasted coffee beans.

Guatamala - Guatemala produces some of the world's finest and most distinctive coffees. Guatemalan Antigua is probably the best coffee from this country. San Marcos is also very good. Guatemala has a rich history of coffee growing and there are many great estates to choose from.
