Coffee Cake Using a Cake Mix |
Apple Pie Coffee Cake 1 package (18 oz.) of Spice Cake Mix 1 can (21 oz.) of Apple Pie Filling 3 Eggs 3/4 cup of Sour Cream 1/4 cup of Water 2 tbsp of Canola Oil 1 tsp of Almond Extract (can be substituted with Vanilla) 2 tbsp of Brown Sugar 1-1/2 tsp of Ground Cinnamon Glaze: 2/3 cup of Confectioners' Sugar 2 tsp of Milk Preparing the Cake: Preheat oven to 350 degrees. Lightly grease a 10-inch cake pan. Set aside about 1 1/2 cups of apple pie filling and about a tablespoon cake mix. Combine the eggs, oil, sour cream, water, extract and what is left of the cake mix and pie filling in a bowl. Mix the ingredients with a hand mixer for a couple of minutes on a low to medium speed. Once thoroughly mixed, pour half of the batter into the cake pan. In separate bowl combine the brown sugar, cinnamon and the tablespoon of cake mix you saved from earlier. Sprinkle carefully over the batter in the cake pan. Next you should carefully put the pie filling you saved earlier into the cake pan. Be careful not to get too close to the edges. Top it off with the remaining batter. Bake at 350 degrees for about 45 minutes. You can check for doneness with a toothpick. Once it's done, let it cool off for about 10 minutes before removing it from pan and transferring it to a wire rack. Combine the ingredients for the glaze in a small bowl and mix well. After the cake has cooled, drizzle it over the cake. Other possible variations of this coffee cake using a cake mix recipes are to use chocolate cake mix and cherry pie filling or yellow cake mix and peach filling. Let your imagination run wild and you might just come up with a something even better. Cherry Coffee Cake 1 package (18 oz.) of Yellow Cake Mix 1 cup of Flour 1 package (1/4 oz.) of Dry Yeast 1 can (21 oz.) Cherry Pie Filling 1/3 cup of Butter 2/3 cup of Warm Water (not hot) 2 Eggs, beaten Galze: 1 cup of Confectioners' Sugar 1 tbsp of Corn Syrup 1-2 tbsp of Water Preparing the Cake: Preheat oven to 350 degrees. Grease a large cake pan (13 x 9). Combine 1 1/2 cups of dry cake mix, flour, yeast and warm water in a large bowl and mix until smooth. Next you should blend in the eggs. Pour the batter into the cake pan. Carefully place the pie fillings on top. Cut the butter in the remaining cake mix until it is coarse and crumbly. Sprinkle gently over the pie filling. Bake at 350 degrees for about 40 minutes until it is light brown. You can check for doneness with a toothpick. Take it out and let it cool on a wire rack. Finally, combine the glaze ingredients in a small bowl and mix well. Drizzle it over the over coffee cake once it has cooled.
